Braised beef with Atra


  • braising beef (blade or chuck)
  • carrots
  • celery
  • onions
  • sage and rosemary
  • juniper berries
  • cloves
  • ½ nutmeg
  • 1 cinnamon stick
  • Atra beer
  • oil
  • salt and pepper


Sauté the onion and add all the vegetables, washed, pared and diced. Add the spices, season with salt and pepper and after a couple of minutes add the braising steak in a piece, tied up as for a roast. Continue cooking for about fifteen minutes until the meat is well sealed on all sides. Now add the Atra beer to come three-quarters up the side of the meat. Simmer for around two hours. Baste the meat occasionally with the braising liquid. When cooked, transfer the meat onto a hot plate. Reduce the juices until quite dense, then whisk to make a sauce that will accompany the braised meat. Best served with grilled or soft polenta.
