Cream of peppers and almonds

Ingredients for 6 people

  • 1 large yellow pepper grilled
  • 3 ripe tomatoes type Cirio
  • 120 g almonds
  • 3 anchovy fillets
  • extra virgin olive oil q.b.
  • salt q.b. 

Roasted peppers over the flame of the stove and peel them.

Blanch the tomatoes for one minute in boiling water, drain, peel and remove the seeds, taking only the pulp.

Put in a blender or in the cutter all the ingredients except the salt that you will put at the end according to your taste and so olive oil.

Let go of the cutter until the ingredients are reduced to a cream, then add the olive oil on the basis of density that you want to give to the cream.

Serve with bread or use it as a condiment for pasta and vegetables.
